Wild Mushroom Soup

- 2 stalks celery shopping list
- 3 tbsp butter shopping list
- 2 ibs button mushrooms shopping list
- 1/2 lb shittake mushrooms shopping list
- 1/2 ib oyster mushrooms shopping list
- 1 tbsp tarragon, chopped shopping list
- 1 tsp salt shopping list
- 1 tsp white pepper shopping list
- 2 cups cream shopping list
- Sherry shopping list
- 3 pints chicken stock shopping list
- 1 pint heavy cream shopping list
- 2 tbsp flour shopping list
How to make it
- Mince onion and celery
- cook in a heavy pot with 1 tbsp butter
- cook until softened
- stir in mushrooms, when mushrooms are cooked add taragon
- cook for 15 minutes
- deglaze with sherry and cook until sherry is absorbed
- stir in stock and cream
- turn heat to high and boil
- in small pan melt butter and stir in flour, add to smooth, beating with a wooden spoon.
- bring to a boil till flour is mixed
- simmer on low 20-30 minutes
