How to make it

  • Mince onion and celery
  • cook in a heavy pot with 1 tbsp butter
  • cook until softened
  • stir in mushrooms, when mushrooms are cooked add taragon
  • cook for 15 minutes
  • deglaze with sherry and cook until sherry is absorbed
  • stir in stock and cream
  • turn heat to high and boil
  • in small pan melt butter and stir in flour, add to smooth, beating with a wooden spoon.
  • bring to a boil till flour is mixed
  • simmer on low 20-30 minutes
