SICILIAN COUNTRY STYLE SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Nelson Estate in Dallas, Texas in 1998.

Ingredients
  • 1/2 cup dried fava beans
  • 1/2 cup dried great northern beans
  • 6 cups water
  • 1 large onion finely chopped
  • 1 carrot peeled and finely chopped
  • 1 small celery stalk finely chopped
  • 4 cups savoy cabbage cut into 1” pieces
  • 2 cups bibb lettuce cut into 1” pieces
  • Freshly grated Parmesan cheese
  • Extra virgin olive oil

Directions
  1. Place fava beans in medium saucepan.
  2. Place great northern beans in large bowl.
  3. Add enough cold water to each to cover by 3” then allow to soak overnight.
  4. Bring fava beans to boil in their soaking liquid then boil 5 minutes.
  5. Drain fava beans and cool slightly.
  6. Using small sharp knife make small slit in skin of each bean.
  7. Peel off outer skins and discard then drain great northern beans.
  8. Bring 6 cups water to boil in large pot then add all beans, onion, carrot and celery.
  9. Partially cover and simmer over medium heat for 30 minutes.
  10. Add cabbage and lettuce then partially cover and cook stirring occasionally for 1 hour.
  11. Season with salt and pepper then ladle into bowls and sprinkle with parmesan then oil.
