Spicy Chinese Pork And Peppercorn Noodles Recipe
SPICY CHINESE PORK AND PEPPERCORN NOODLES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Holbert Estate in Fort Worth, Texas in 1988.

Ingredients
  • 8 ounces minced pork
  • 1 tablespoon dark soy sauce
  • 1 teaspoon salt
  • 8 ounces peanut oil
  • 3 tablespoons finely chopped garlic
  • 2 tablespoons finely chopped peeled fresh ginger root
  • 5 tablespoons finely chopped green onions
  • 2 tablespoons peanut butter
  • 2 tablespoons dark soy sauce
  • 2 tablespoons chili oil
  • 2 teaspoons salt
  • 8 ounces chicken stock
  • 12 ounces fresh egg noodles
  • 1 tablespoon peppercorns roasted and ground

Directions
  1. Combine pork, soy sauce and salt in a small bowl and mix well.
  2. Heat a wok or frying pan until hot.
  3. Add oil and deep fry pork stirring with a spatula to break it into small pieces.
  4. When pork is crispy and dry about 4 minutes remove it with a slotted spoon and drain.
  5. Pour off oil leaving 2 tablespoons in the wok.
  6. Reheat wok or pan and add garlic, ginger and onions then stir fry 30 seconds.
  7. Add peanut butter, soy sauce, chili oil, salt and chicken stock and simmer 4 minutes.
  8. Cook noodles in a large pot of boiling water for 2 minutes then drain noodles well.
  9. Pour noodles in bowl and ladle sauce over top.
  10. Spoon pork mixture and roasted peppercorns over top and serve immediately.
