Blackened Scallops Over Pasta Recipe

Ingredients
  • 1 lb Alaska Scallops
  • Fresh Angel-hair pasta, 9 or 12 oz pkg
  • 1 cup Mushrooms, sliced
  • ½ sweet or yellow Onion, chopped
  • ½ Tomato, chopped
  • Lemon-flavored olive oil
  • butter
  • Blackening Spices:
  • 1/4 Tbsp Salt
  • 1/3 Tbsp White Pepper
  • 1 Tbsp Black Pepper
  • ¾ tsp Dry Mustard
  • ¾ tsp Cayenne Pepper
  • 1/2 tsp Garlic Powder
  • 1/8 tsp dried Thyme Leaves

Directions
  1. Mix blackening spices together.
  2. Dredge scallops in blackening spices.
  3. In skillet, sauté onion in butter, add mushrooms after onions are translucent, set aside.
  4. Boil pasta in water, add a little olive oil.
  5. Cook 4-5 minutes, or according to instructions.
  6. Heat a pat of butter in skillet to high heat.
  7. Add scallops on high heat for 6-8 minutes.
  8. Cover to keep warm, set aside.
  9. Place pasta in a bowl.
  10. Drizzle with lemon-flavored olive oil.
  11. Add small pat of butter, mushrooms, onions, tomatoes.
  12. Toss. Serve pasta, place scallops on top.
  13. Serve with parmesan if desired.
