Sausage Corn Meal Dumpling Casserole Recipe
SAUSAGE CORN MEAL DUMPLING CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hakes Estate in Dallas, Texas in 1988.

Ingredients
  • 1 pound ground spicy sausage
  • 1 tablespoon vegetable oil
  • 1/3 cup chopped white onions
  • 8 ounce can tomato sauce
  • 2/3 cup beef broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon sage
  • 1/4 cup chopped green peppers
  • 1 clove garlic
  • Dumplings:
  • 1/2 cup white corn meal
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup milk
  • 1-1/2 teaspoons vegetable oil

Directions
  1. In large heavy skillet cook sausage in oil for 5 minutes stirring to break up meat.
  2. Add remaining ingredients except dumplings then bring to boil.
  3. Reduce heat then cover and simmer 15 minutes stirring occasionally.
  4. Meanwhile mix all dumpling ingredients together and stir until well combined.
  5. Drop by level tablespoonful onto hot meat mixture.
  6. Cook uncovered for 10 minutes then cover and cook an additional 10 minutes.
