A twist on your traditional pavlova, crunchy-crisp meringue on the outside, more like chocolate mousse in the middle, topped with mixed berries, perfect for the summer holiday-season bbqs.

Ingredients
  • 6 egg whites
  • 300g white sugar
  • 3 Tbsp cocoa powder
  • 50g dark cooking chocolate, grated
  • 1 Tbsp balsamic vinegar
  • about 200 ml thick cream
  • 1 Tbsp icing sugar
  • about a cup of mixed berries (i use cherries(pitted), strawberries (sliced) and blueberries)

Directions
  1. in a large glass bowl, whip the egg whites with electric beaters till they're foamy.
  2. Gradually add in the sugar, keep beating...till its stiff...
  3. add cocoa, beat, (it'll look a bit thicker now) chocolate, beat and vinegar. beat.
  4. Preheat oven to slow (150C)
  5. Line a baking tray and pour on the mixture, shaping it into a ..round cake shapelike...see the picture.
  6. Bake for one hour. and allow to cool. (dont worry if it has cracks, these can be patched up with cream)
  7. Whip the cream and icing sugar together till thick and spreadable...WHIPPED you know?
  8. Spread over the pav (be careful, its fragile).
  9. Top with the berries.
  10. no, really, its preeeeeetty good. really.
