Beet Souffle Salad

- 1 (4 serving size) lemon Jell-o shopping list
- 1 1/4 cups boiling water shopping list
- 1/4 cup beet juice shopping list
- 1/2 cup mayonnaise shopping list
- 1/4 teaspoon salt shopping list
- dash ground black pepper shopping list
- 1 cup canned beets, diced shopping list
- 1 cup green cabbage, shredded shopping list
- 1 tablespoon sweet onion, minced shopping list
- 2 hard cooked eggs, sliced or chopped (optional) shopping list
How to make it
- Dissolve Jell-o in boiling water.
- Add beet juice, mayonnaise, salt and pepper. Mix well.
- Chill until thickenend.
- Beat with electric mixer until "fluffy".
- Fold in vegetables.
- Arrange hard cooked egg in bottom of ring mold. (I frequently leave the eggs out.)
- Gently spoon in gelatin mixture.
- Cover and chill until firm.
