Reduced Fat Pineapple Right Side Up Cake

REDUCED FAT PINEAPPLE RIGHT SIDE UP CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dorsett Estate in Richardson, Texas in 1986.
Ingredients
- 1/2 cup unsweetened applesauce shopping list
- 8 ounce can crushed pineapple drained and reserve juice shopping list
- 1/3 cup skim milk shopping list
- 1/3 cup egg beaters shopping list
- 1/2 teaspoon vanilla shopping list
- 1-3/4 cup flour shopping list
- 1/3 cup sugar shopping list
- 2 teaspoons baking powder shopping list
- 1/4 cup brown sugar shopping list
How to make it
- Preheat oven to 350 then spray square cake pan with cooking spray.
- Stir together applesauce, reserved pineapple juice, milk, egg substitute and vanilla.
- Combine flour, white sugar and baking powder then stir wet ingredients into dry ingredients and spread in the pan.
- Sprinkle top of batter with crushed pineapple.
- Sprinkle brown sugar over the pineapple.
- Bake for 30 minutes then cook 10 minutes sand serve warm.
