Lemon Toffee

- 2 dl light colour syrup shopping list
- 2 dl whipping cream shopping list
- 2 dl white sugar shopping list
- 1 large lemon shopping list
How to make it
- Mix syrup, cream and sugar and put to boil.
- Turn down the temperature to simmer.
- Mix around with flat end spatula.
- Finely grate the yellow part of the peel of the lemon.
- Prepare some baking paper into a 15 by 15 cm tray.
- Drop some of the solution into a glass of water.
- If one just about can roll into a small ball it is ready.
- If so put in the lemon peel.
- Mix thoroughly.
- Pour into the paper tray.
- Let cool down.
- Cut into smaller pieces ca 2 by 2 cm.
- Wrap in baking paper.
- Option:
- Squeeze the lemon and pour the juice into sugar mix BEFORE heating it up.
