Pancake Pasta This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Dallas, Texas in 1988.

Ingredients
  • 4 cups cooked spaghetti
  • 4 large eggs
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon caraway seeds
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons butter

Directions
  1. Whisk eggs, spices and sugar then add pasta, salt and pepper.
  2. Heat butter in large skillet over medium high heat then add pasta mixture and reduce heat.
  3. Cover skillet and cook until bottom is crisp about 15 minutes.
  4. To serve invert skillet over a platter then cut into wedges and serve.
