Jamaican Pork Loin Chops With Apples And Tamarind - Apricot Sauce

- 1- tablespoon dry jerk seasoning ( see my recipes)http://www.grouprecipes.com/83563 shopping list
- 2- pounds boneless pork loin chops shopping list
- 2- tablespoons vegetable oil shopping list
- 2- large firm apples, peeled , cored and sliced 1/2 inch thick shopping list
- ******************************************* shopping list
- tamarind- apricot sauce recipe below ... shopping list
- 1- 8 ounce can sweetened tamarind nectar shopping list
- 4- ounces apricot jam shopping list
- 2- tablespoons honey shopping list
- 1- teaspoon Dijon style mustard....................... shopping list
- in a small saucepan combine the tamarind nectar, and apricot jam and bring to a boil over medium heat shopping list
- continue to boil, stirring frequently, until the mixture thickens.stir in the honey shopping list
- add the mustard if desired shopping list
- serve over meat immed or alow to come to room temp for all other dishes .. shopping list
- refrigerate in a tightly sealed glass jar use within 4 days .... shopping list
- makes 1 1/2 cups sauce shopping list
How to make it
- Rub the jerk seasoning all over the pork chops
- in a large skillet heat the oil over medium- high heat........
- add the meat and cook until browned, about 3 minutes on each side
- reduce heat to low and place apples on top of the meat cover and cook for 10 minutes or until the apples are soft
- pour 3 tablespoons of the tamarind- apricot sauce over the pork and apples to make a glaze
- cook uncovered for 1 more minute then turn both the apples and meat and cook 1 more minute
- serve with the remaining sauce alongside with the pan drippings poured over the meat...........yummm
- serves 4
