Boneless pork loin chops are so fast cooking and there is no waste ....you cant go wrong ........use my jerk seasoning on this see my recipes............... courtesy jerk jamaica

Ingredients
  • 1- tablespoon dry jerk seasoning ( see my recipes)http://www.grouprecipes.com/83563
  • 2- pounds boneless pork loin chops
  • 2- tablespoons vegetable oil
  • 2- large firm apples, peeled , cored and sliced 1/2 inch thick
  • *******************************************
  • tamarind- apricot sauce recipe below ...
  • 1- 8 ounce can sweetened tamarind nectar
  • 4- ounces apricot jam
  • 2- tablespoons honey
  • 1- teaspoon Dijon style mustard.......................
  • in a small saucepan combine the tamarind nectar, and apricot jam and bring to a boil over medium heat
  • continue to boil, stirring frequently, until the mixture thickens.stir in the honey
  • add the mustard if desired
  • serve over meat immed or alow to come to room temp for all other dishes ..
  • refrigerate in a tightly sealed glass jar use within 4 days ....
  • makes 1 1/2 cups sauce

Directions
  1. Rub the jerk seasoning all over the pork chops
  2. in a large skillet heat the oil over medium- high heat........
  3. add the meat and cook until browned, about 3 minutes on each side
  4. reduce heat to low and place apples on top of the meat cover and cook for 10 minutes or until the apples are soft
  5. pour 3 tablespoons of the tamarind- apricot sauce over the pork and apples to make a glaze
  6. cook uncovered for 1 more minute then turn both the apples and meat and cook 1 more minute
  7. serve with the remaining sauce alongside with the pan drippings poured over the meat...........yummm
  8. serves 4
