How to make it

  • Puree avocado in a blender or food processor until smooth.
  • Sautee the chopped shallots in olive oil until transuscent; set aside to cool.
  • In a large bowl, whisk together the avocado with chicken stock, heavy cream and shallots until smooth.
  • Stir in salt, pepper and nutmeg; Enjoy!

    This sounds wonderful! I always put a little fresh-ground nutmeg in dishes with cream--you can't beat that little something extra that it gives!
