Chunky Beef Vegetable Soup Recipe
Lovely old-fashioned soup/stew for a cold winter's day. Hearty stick-to-your-ribs flavor. The biggest problem with this recipe is waiting until its done; the aroma is maddening!

Ingredients
  • 3 c vegetable juice
  • 2 c hot water
  • 1 lb beef stew meat, cut in 1" cubes
  • 8 c frozen mixed vegetables
  • 2 medium potatoes, peeled and cubed
  • 1 small onion, chopped
  • 1/4 c ketchup
  • 3 tbsp beef-flavor instant bouillon
  • 1/2 t pepper

Directions
  1. Pour vegetable juice and water into crockpot; add beef, vegetables, ketchup, bouillon and pepper; stir gently. Place lid on crockpot.
  2. Cook on LOW for 8 to 9 hours OR on HIGH for 4 to 5 hours until beef is tender.
