Lentil Leek Chili Recipe
I don't recall where this recipe came from - it is scribbled on a sheet of paper that is getting stained with age and use. Even my meat-eaters agree this is a tasty chili but are convinced it would be better with meat!

Ingredients
  • 1 cup dried lentils
  • 6 leeks, chopped
  • 1 cup celery, chopped
  • 28 oz crushed tomatoes
  • 1 tbsp chili powder (I use much more, up to 4 tbsp)
  • 2 tsp coriander
  • 2 tsp garam masala
  • 2 tsp cumin
  • 4 cloves crushed garlic

Directions
  1. Rinse lentils and cook in 4-6 cups of water until tender. Drain.
  2. Soften celery and leeks in 1/2 cup water in the microwave until tender.
  3. Cook lentils, tomatoes, celery, and leeks on low in a large saucepan for about 10 minutes.
  4. Add seasonings to taste and simmer to let flavours blend.
