Brocolli And Chicken Soup With Almonds

- 500g chicken necks shopping list
- 1 meduium carrot shopping list
- 1/2 onion shopping list
- pinch of salt shopping list
- 1kg brocolli shopping list
- 2 Tablespoons chopped parsley/chives shopping list
- 15 almonds shopping list
- 1 Tablesoon butter/ marg shopping list
- freshly ground black pepper shopping list
How to make it
- Skin and cut the chicken necks into 3sm pieces
- Peel and cut carrots and onion
- Put necks into large sauspan.
- Cover with water
- Add salt onions, and carrot and birng to the boil
- Remove surface skum
- Wash and cut the brocolli into pieces and cook with the necks for 20 minutes
- Add more water if necessary to keep brocolli covered
- Chop almonds and parsley/ chives
- Remove onion from pan and discard
- Remove necks and place to one side
- In a food processor blend brocolli with the liquid and butter/ marg tp a puree
- Return to sauspan and rehaea with the necks and carrot
- Add water if necessary to make the liquid smoother.
- Season with salt and pepper add parsley
