Brocolli And Chicken Soup With Almonds Recipe

Ingredients
  • 500g chicken necks
  • 1 meduium carrot
  • 1/2 onion
  • pinch of salt
  • 1kg brocolli
  • 2 Tablespoons chopped parsley/chives
  • 15 almonds
  • 1 Tablesoon butter/ marg
  • freshly ground black pepper

Directions
  1. Skin and cut the chicken necks into 3sm pieces
  2. Peel and cut carrots and onion
  3. Put necks into large sauspan.
  4. Cover with water
  5. Add salt onions, and carrot and birng to the boil
  6. Remove surface skum
  7. Wash and cut the brocolli into pieces and cook with the necks for 20 minutes
  8. Add more water if necessary to keep brocolli covered
  9. Chop almonds and parsley/ chives
  10. Remove onion from pan and discard
  11. Remove necks and place to one side
  12. In a food processor blend brocolli with the liquid and butter/ marg tp a puree
  13. Return to sauspan and rehaea with the necks and carrot
  14. Add water if necessary to make the liquid smoother.
  15. Season with salt and pepper add parsley

This sounds amazing. I could live on soup i love it so much. the only thing is, could I use ck breast instead? i have never had or bought a ck neck in my life


Maybe the brests will be a bit fatty
