How to make it

  • Skin and cut the chicken necks into 3sm pieces
  • Peel and cut carrots and onion
  • Put necks into large sauspan.
  • Cover with water
  • Add salt onions, and carrot and birng to the boil
  • Remove surface skum
  • Wash and cut the brocolli into pieces and cook with the necks for 20 minutes
  • Add more water if necessary to keep brocolli covered
  • Chop almonds and parsley/ chives
  • Remove onion from pan and discard
  • Remove necks and place to one side
  • In a food processor blend brocolli with the liquid and butter/ marg tp a puree
  • Return to sauspan and rehaea with the necks and carrot
  • Add water if necessary to make the liquid smoother.
  • Season with salt and pepper add parsley

    this sounds amazing. I could live on soup i love it so much. the only thing is, could I use ck breast instead? i have never had or bought a ck neck in my life
