Chicken N Soba Noodle Soup

- 2 t dark sesame oil shopping list
- 1 1/2 t sesame seeds shopping list
- 1 cup chopped red pepper shopping list
- 3/4 cup chopped onion shopping list
- 3/4 t salt shopping list
- 2 T minced peeled fresh ginger shopping list
- 3 (or more if like garlic) cloves minced garlic shopping list
- 2 T low-sodium soy sauce shopping list
- 28 oz. chicken broth (or homemade) shopping list
- 1/2 t (or more if like spicy) hot chile sauce, such as siricha shopping list
- 2 chicken breasts shopping list
- 2 oz. soba noodles shopping list
- 4 cups shredded bok choy shopping list
- 1 cup green part of scallions shopping list
- 3 T basil (use fresh if have it - I did not but fresh herbs always tastier) shopping list
- 1 T lime juice shopping list
How to make it
- Heat sesame oil in dutch oven over medium heat
- Add red pepper, sesame & onion, cook 5 minutes or until tender, stirring frequently
- Add 1/4 t salt, ginger & garlic, cook 1 minute stirring constantly
- Add 1/4 t salt, soy sauce, chile sauce, broth & chicken
- Bring to boil, reduce heat and simmer one hour
- Remove chicken, cool slightly & shred with two forks
- Add soba noodles, cook 5 minutes or until done
- Stir in bok choy, reduce to simmer
- Stir in 1/4 salt, green onions, basil
- Take off heat stir in lime juice
- (I did not add salt to mine since I had homemade stock and didn't feel I needed salt. I also ate it with some sourdough bread)
