Chicken N Soba Noodle Soup Recipe

Ingredients

2 t dark sesame oil

1 1/2 t sesame seeds

1 cup chopped red pepper

3/4 cup chopped onion

3/4 t salt

2 T minced peeled fresh ginger

3 (or more if like garlic) cloves minced garlic

2 T low-sodium soy sauce

28 oz. chicken broth (or homemade)

1/2 t (or more if like spicy) hot chile sauce, such as siricha

2 chicken breasts

2 oz. soba noodles

4 cups shredded bok choy

1 cup green part of scallions

3 T basil (use fresh if have it - I did not but fresh herbs always tastier)

1 T lime juice

Directions

Heat sesame oil in dutch oven over medium heat

Add red pepper, sesame & onion, cook 5 minutes or until tender, stirring frequently

Add 1/4 t salt, ginger & garlic, cook 1 minute stirring constantly

Add 1/4 t salt, soy sauce, chile sauce, broth & chicken

Bring to boil, reduce heat and simmer one hour

Remove chicken, cool slightly & shred with two forks

Add soba noodles, cook 5 minutes or until done

Stir in bok choy, reduce to simmer

Stir in 1/4 salt, green onions, basil

Take off heat stir in lime juice

(I did not add salt to mine since I had homemade stock and didn't feel I needed salt. I also ate it with some sourdough bread)
