Garlicky Tortellini Spinach And Tomato Soup

- 1 Tbsp olive oil or butter shopping list
- 8 cloves of garlic, chopped finely shopping list
- 4 cups chicken broth shopping list
- 6 oz. of cheese-filled tortellini shopping list
- 2 1/2 C chopped fresh tomatoes (or 14 oz. can of diced tomatoes with liquid) shopping list
- 10 oz. bag of spinach, stems removed shopping list
- 8-10 fresh basil leaves, chopped (or can use 2 tsp. or more dried basil) shopping list
- parmesan cheese (optional) shopping list
How to make it
- Heat oil/butter in a large saucepan over medium high heat. add garlic and saute for 2 minutes.
- add broth and bring to a boil. add tortellini and cook 3 minutes.
- add tomatoes and their liquid (if using canned); reduce heat and simmer until pasta is tender (about 5 minutes)
- stir in spinach and basil; cook until just wilted (about 2 minutes)
- Spoon into bowls and if desired, top with sprinkled parmesan cheese.
