Seafood With Fennel Recipe
I made this up when I had some fennel and didn't want to roast it.

Ingredients
  • 2 cloves garlic, chopped
  • 1 shallot, chopped
  • 1 medium onion, chopped
  • 1 bulb fennel, thinly sliced
  • Trader Joe's frozen seafood medley (you can use anything though)
  • 1/2 cup white wine (I used an Orvieto, but a Chardonnay would do)
  • 1 tbsp butter
  • 1-2 tbsp paprika
  • 1-2 tbsp olive oil
  • 1 1/2 tsp cornstarch
  • 1 tsp lemon juice (optional and to taste)
  • salt (to taste)
  • pepper (to taste)

Directions
  1. Heat olive oil in a large pan.
  2. Sautee garlic, shallot, onion, and fennel all together until they start to just get translucent.
  3. Add paprika, lemon juice, salt, and pepper and cook for 1 minute.
  4. Add white wine and cook on medium uncovered for 10 minutes.
  5. Add seafood to pan and cook until seafood is done.
  6. Add butter and cornstarch, cook until fully incorporated and you have a nice sauce.
  7. Serve with rice or noodles.
