Chicken And Shrimp Over Spinach Fettuccine Recipe
This recipe is simple, but impressive. You can use all chicken or all shrimp if you prefer and you may use different types of pasta.

  • 4 Tablespoons butter
  • 8 ounces of sliced fresh mushrooms
  • 4 scallions, thinly sliced
  • 1 10 3/4 ounce can of condensed cream of chicken soup
  • 2 Tablespoons of half and half (can use milk)
  • 3 ounces cream cheese, cubed and softened
  • 2 cups diced cooked chicken
  • 8 ounces shrimp, uncooked (peeled and deveined)
  • 3 Tablespoons sherry
  • 2 Tablespoons of snipped fresh parsley
  • 12 ounces of spinach fettuccine, cooked

Directions
  1. Melt butter in a large saucepan; add mushrooms and scallions and saute five minutes. Remove from heat.
  2. Stir in soup and half and half until well combined.
  3. Add the cream cheese and cook over low heat, stirring occasionally, until cream cheese is melted.
  4. Stir in the chicken, shrimp and sherry. Simmer 12 minutes, but do not allow mixture to come to a boil.
  5. Just before serving, stir in parsley.
  6. Mound spinach fettuccine in large pasta bowl and spoon chicken mixture over fettuccine.
