Southwest Scramble Recipe
This dish tastes great as is, but can easily be modified to add meat or other vegetables. With a side of buttered toast, and breakfast meat (if not in the scramble already), and you got yourself a great breakfast!

Ingredients
  • 1 medium potato, washed and (fairly finely) diced
  • 4 eggs
  • About 2 tbsp. Emeril's Southwest Essence (buy in store or make your own. I make my own - recipe available online)
  • 2 tbsp. unsalted butter
  • 2 - 4 ounces of your favorite shredded cheese (I use cheddar)

Directions
  1. Melt the butter in a medium size skillet.
  2. Add the diced potatoes and season with the Essence. Cook until almost done.
  3. Crack and pour the 4 eggs over the potatoes.
  4. Quickly sprinkle the cheese over the egg and potato.
  5. Stir, combining all ingredients to make sure the flavors are evenly dispursed.
