Pizza Carbonara

- 2 cloves garlic shopping list
- 1 to 2 tbsp extra virgin olive oil shopping list
- 1 ready-made pizza crust shopping list
- 1/2 pound bacon shopping list
- 4 eggs shopping list
- 1 ball fresh mozzarella shopping list
- handful fresh parsley shopping list
How to make it
- Preheat oven to 500ºF or as hot as it will go.
- Chop up the garlic finely and saute in the olive oil.
- Pour the olive oil/garlic over the pizza crust and spread with a knife or pastry brush. Leaving a bit in the pan is preferred.
- In a separate pan, fry the bacon until just a bit less cooked than you prefer it. Keep a close watch on it.
- In the remaining olive oil, break the eggs. Roughly scramble so there are nice streaks of yellow and white.
- Spread the eggs over the oiled pizza crust.
- By now, the bacon should be done. Remove it, drain on paper towel, and chop roughly. Add to pizza.
- Slice up the fresh mozzarella into chunks and add it to the pizza.
- Finally, top with roughly cut parsley.
- Bake this (directly on the rack for crispy crust) until it's browned to your liking. Usually 10 to 15 mins.
