How to make it

  • Preheat oven to 500ºF or as hot as it will go.
  • Chop up the garlic finely and saute in the olive oil.
  • Pour the olive oil/garlic over the pizza crust and spread with a knife or pastry brush. Leaving a bit in the pan is preferred.
  • In a separate pan, fry the bacon until just a bit less cooked than you prefer it. Keep a close watch on it.
  • In the remaining olive oil, break the eggs. Roughly scramble so there are nice streaks of yellow and white.
  • Spread the eggs over the oiled pizza crust.
  • By now, the bacon should be done. Remove it, drain on paper towel, and chop roughly. Add to pizza.
  • Slice up the fresh mozzarella into chunks and add it to the pizza.
  • Finally, top with roughly cut parsley.
  • Bake this (directly on the rack for crispy crust) until it's browned to your liking. Usually 10 to 15 mins.
