Serve these tasty muffins with lunch or dinner instead of your usual bread. With savory rosemary flavor,they're especially tasty with ham.

Ingredients
  • 1c currants
  • 11/2c boiling water
  • 1/2c olive oil
  • 1/2tsp vanilla
  • 2c flour
  • 1c whole wheatflour
  • 2/3c sugar
  • 2tsp baking soda
  • 2tsp crushed dried rosemary
  • 2c grated carrots

Directions
  1. Preheat oven to 375.Spray 12 muffin cups with cooking spray.
  2. In a small bowl,combine currants,boiling water,olive oil and vanila;set aside.
  3. In large bowl,combine flours,sugar,baking soda and rosemary. Make well in center of dry ingredients. Add wet ingredients,stirring til moistened. Fold in carrots till evenly blended.
  4. Divide batter among muffin cups. Bake 20-25 mins.
