Rosemary Carrot Muffins

- 1c currants shopping list
- 11/2c boiling water shopping list
- 1/2c olive oil shopping list
- 1/2tsp vanilla shopping list
- 2c flour shopping list
- 1c whole wheatflour shopping list
- 2/3c sugar shopping list
- 2tsp baking soda shopping list
- 2tsp crushed dried rosemary shopping list
- 2c grated carrots shopping list
How to make it
- Preheat oven to 375.Spray 12 muffin cups with cooking spray.
- In a small bowl,combine currants,boiling water,olive oil and vanila;set aside.
- In large bowl,combine flours,sugar,baking soda and rosemary. Make well in center of dry ingredients. Add wet ingredients,stirring til moistened. Fold in carrots till evenly blended.
- Divide batter among muffin cups. Bake 20-25 mins.
