Butternut Squash Soup

- 1 butternut squash, cut into 1/2 and seeds scooped out shopping list
- 6 strips of bacon ( my husband always buys bulk from costco & its maple flavor) crumbled shopping list
- 1 quart of heavy cream ( I use half and half) shopping list
- 1 Tbs. brown sugar,divided shopping list
- 2 c chicken broth shopping list
- 1 lg sweet onion, chopped shopping list
- 1/2 stick butter shopping list
- parmesan cheese shopping list
How to make it
- Cut squash in half, long way, scoop out seeds
- put squash on cookie sheet & brown sugar in center
- bake squash for about 30 to 40 minutes ( check for tenderness)
- saute bacon, the cool and crumble. Put in dutch oven and saute with onion
- cool squash and scoop out of skin and put into dutch oven
- mash squash with potato masher
- add chicken broth and heavy cream and butter. heat through
- sprinkle with parmesan cheese
fry bacon, cool

bake butternut, cool

carmalize onion
