How to make it

  • Cut squash in half, long way, scoop out seeds
  • put squash on cookie sheet & brown sugar in center
  • bake squash for about 30 to 40 minutes ( check for tenderness)
  • saute bacon, the cool and crumble. Put in dutch oven and saute with onion
  • cool squash and scoop out of skin and put into dutch oven
  • mash squash with potato masher
  • add chicken broth and heavy cream and butter. heat through
  • sprinkle with parmesan cheese
fry bacon, cool   Close
bake butternut, cool   Close
carmalize onion   Close
add squash   Close
chicken broth   Close
