Fiesta Fruit Bread

- 3 c all purpose flour shopping list
- 2/3 c sugar shopping list
- 1tspn baking soda shopping list
- 2 eggs, beaten shopping list
- 1 (8oz) lemon lowfat yogurt shopping list
- 1/3 c vegetable oil shopping list
- 1 tspn grated lemon peel shopping list
- 1 can (15oz) DEL MONTE FIESTA fruit cocktail, drained shopping list
- 1/2 c chopped walnuts or pecans shopping list
How to make it
- Preheat oven to 350deg F. Combine flour, sugar, and baking soda, mix well.
- Blend eggs with yogurt, oil and lemon peel. Add dry ingredients along with the fruit cocktail and nuts; stir just enough to blend. Spoon into greased 9x5- inch loaf pan or two 8x4 loaf pan.
- Bake 60 - 70 minutes or until wooden pick inserted into center comes out clean. Let it stand in pan for 10 minutes. Turn out onto wire rack, cool completely
