Jiffy Chipotle Muffins Recipe

	Pleasantvalleycabins / All my dishes 10 months, 2 weeks ago I got this idea from Chef Elaine's recipe. Using the Jiffy mix makes it so easy. No measuring really. Just toss everything in and it was really very tasty, especially with my Mexican Chicken Bake. Prep:15m Cook:15m Servings:4	Pleasantval

Ingredients

1 box Jiffy corn muffin mix

1 egg

1/4 cup milk

1/4 cup sour cream

1/4 cup shredded cheddar cheese

1 T. finely chopped red pepper

1 finely chopped small chipotle pepper, seeds and ribs removed.

Directions

Mix well and pour into greased muffin tins and bake at 400 for 15 minutes.
