A little twist on the standard Tamale Pie, which normally uses ground beef.

Ingredients
  • 3 boneless, skinless chicken breasts, chopped
  • 2 T olive oil
  • 1 L onion, chopped
  • 1 pkg Lipton Onion Soup Mix
  • 1 pkg any Taco Seasoning
  • 1 can of creamed corn
  • 1 t. garlic powder
  • 2 C. shredded cheddar (I use sharp, cuz that's our fave!)
  • 3 T finely chopped cilantro
  • 1 C. cornmeal
  • 3 C chicken broth
  • 2 C. water
  • 2 T melted butter

Directions
  1. Preheat oven to 350
  2. Sautee chicken with chopped onions, olive oil and seasoning mixes
  3. Stir and sautee until chicken is cooked (about 10 minutes)
  4. Add corn and garlic powder and cilantro
  5. Put ingredients to the side
  6. Cook cornmeal & broth and water until a paste forms
  7. Remove from heat and add melted butter
  8. In a casserole dish, layer the chicken mixture and cheese alternately until all used up
  9. Cover the entire thing with the cornmeal mixture
  10. Bake until top of cornmeal is golden brown, approximately 25 minutes
  11. Top finished casserole with dollops of butter, if desired
