Yoghurt Sorbet Recipe
From Barefoot Contessa. I would serve this in scooped out lemons which serve to hold the sorbet and garnish with a mint leaf. I also would use perhaps a lemon flavored yoghurt

Ingredients
  • 3 extra-large egg whites
  • 2/3 cup sugar
  • 3 cups plain non-fat yogurt

Directions
  1. Prep time does not include chilling
  2. With a hand-held mixer, beat the egg whites in a medium bowl, until frothy.
  3. While still beating, slowly add the sugar and beat on high speed until the egg whites are stiff and shiny, about 4 minutes.
  4. (This can also be done in the bowl of an electric mixer fitted with the whisk attachment).
  5. In another bowl, whisk the yogurt until smooth.
  6. Fold in the egg whites.
  7. Transfer the mixture to an ice cream freezer and freeze according to the manufacturer's instructions.
  8. Freeze in a quart container until ready to serve.

I have had frozen yoghurt before, nice with raspberry sauce!
