Ingredients

How to make it

  • Cook rice
  • Brown the meat
  • Mix the meat, rice & soup
  • Season to taste
  • Take the stem off of the acorn squash & slice to pointy bottom off, making sure it will stand upright in the baking dish (I used a cast iron skillet)
  • Scoop out the seeds
  • Fill with the meat/rice mixture & place the lid back on
  • Bake at 350 for an hour or until the squash is cooked (I stuck a knife in the sides to check)

    Hi onedegree! I like your version of my Dinner In A Pumpkin recipe. I just noticed today your e-mail in my inbox, so had to check it out. It's a versatile recipe that is very forgiving and lends itself to lots of variations. It's so great that we learn from each other!
