Dinner In An Acorn Squash Recipe
This is my take on the classic 'Dinner in a Pumpkin' This would make a great dinner party entree, everyone has there own

Ingredients
  • Acorn squash...the ones I had were small, so these worked out to be single servings
  • Ground beef...of course you could use ground turkey or chicken breast
  • Quinoa...only because I had it left over, I would use brown rice
  • Cream of mushroom soup
  • S&P

Directions
  1. Cook rice
  2. Brown the meat
  3. Mix the meat, rice & soup
  4. Season to taste
  5. Take the stem off of the acorn squash & slice to pointy bottom off, making sure it will stand upright in the baking dish (I used a cast iron skillet)
  6. Scoop out the seeds
  7. Fill with the meat/rice mixture & place the lid back on
  8. Bake at 350 for an hour or until the squash is cooked (I stuck a knife in the sides to check)

Alterations


You could also add cheese
Cook some onion and/or garlic with the meat
Add a can of mushrooms
Use instant rice if you are into that, there will be plenty of moisture from the squash
