Nice and dilly seafood chowder. Didn't take a lot of effort, or a lot of time. Went well with cheese garlic bread!

Ingredients
  • 4 Tablespoons butter
  • 4 tablespoon flour
  • 1 1/2 small onions diced
  • 2 celery stalks sliced
  • 6 potatoes diced in large cubes
  • 6 large carrots sliced
  • 1 cup milk (I used 1%)
  • 4 sprigs fresh dill
  • 1/8 teaspoon lemon zest
  • 1/8 teaspoon fennel seeds ground
  • 1/2 teaspoon parsley
  • 1/2 teaspoon ground garlic
  • 1 pound peeled raw shrimp
  • 1 tub shucked raw oysters
  • salt and pepper to taste

Directions
  1. In a small pot parboil potatoes, when done reserve with the water.
  2. In a separate pot parboil carrots.
  3. In a large pot over medium heat, melt butter, add onions and celery cook for aprox. 4 - 5 minutes
  4. add flour to butter, celery and onion pot.
  5. Stir to blend, then add potatoes and their liquid, then add carrot. I cut the dill with my kitchen cutters, and put the stalk in for flavour. Add this and lemon peel, fennel, parsley and garlic. Slowly stir in the milk, turn down heat and add the shrimp then add the oysters. (My oysters were very large so I sliced them into smaller pieces before adding). I cooked it for a few more minutes to ensure the oysters were fully cooked. Take out the dill stalk before serving. I served my
