  • Slice eggplant long ways + - 8mm
  • fry in the oil on both sides untill no longer "white"
  • cool
  • dip in beaten egg/ parmesan/ s&p
  • fry again untill golden brown

The second fry.   Close
Arrange on platter.   Close
