How to make it
- in a small pot, make the salsa. Add the tomato and chile to the pot cover with water, and salt. Boil until tender(chiles turned softer green, and tomato skin starts to peel). Remove from heat, add to blender with garlic, and salt, and a little bit of cooking water to loosen. Set chile aside
- In a saucepan, add ground beef, onion and seasonings. Brown breaking up beef. once lightly browned add tomatoes and corn, and continue to brown until nicely cooked, and tomatoes have started to somewhat "fade". Meanwhile, in a small saucepan, heat about an inch of veg oil on medium high heat. make corn tortilla shells by placing one tortilla in oil, should be hot enough to make it bubble slightly. Fry one side until it starts to just crisp up, then lift one side to make a shell. Fry the one side until nicely crisped, then turn to other side crisp it. Continue with other tortillas. drain on paper towels, use immediately, or they will get to hard sitting for a long time.
- Fill shells with beef mixture, add chile, and toppings, and serve with rice and beans and enjoy!
