How to make it

  • Peel cube and cook eggplant then mix with onion, parsley, soup, Worcestershire and salt.
  • Put in a greased casserole dish.
  • Stir together cracker crumbs and butter then spread on top of casserole.
  • Bake at 375 for 45 minutes.
