Kentucky Eggplant

- 1 large eggplant shopping list
- 1/4 cup chopped onion shopping list
- 3 tablespoons chopped parsley shopping list
- 1 can cream of mushroom soup shopping list
- 1 teaspoon worcestershire sauce shopping list
- 1/2 teaspoon salt shopping list
- 1 cup cracker crumbs shopping list
- 2 tablespoons butter shopping list
How to make it
- Peel cube and cook eggplant then mix with onion, parsley, soup, Worcestershire and salt.
- Put in a greased casserole dish.
- Stir together cracker crumbs and butter then spread on top of casserole.
- Bake at 375 for 45 minutes.
