Light Broccoli Salad

- 3 cups broccoli florets shopping list
- 1 8 oz can of diced water chestnuts, drained shopping list
- 1/2 cup dried cranberries shopping list
- 1/4 cup chopped red onion shopping list
- 3/4 cup fat-free or reduced fat mayonnaise shopping list
- 1/2 cup fat-free plain yogurt shopping list
- 2 teaspoon sugar or sugar substitute (such as Splenda) shopping list
- 1.5 teaspoon cider vinegar shopping list
- 2 teaspoon Dijon mustard shopping list
- 1/4 cup silvered almonds shopping list
- 4 tablespoons reduced fat grated Parmesan shopping list
- salt & pepper to taste shopping list
How to make it
- In a large bowl, combine the broccoli, water chestnuts, cranberries and onion.
- In a small bowl, whisk the mayo, yogurt, sugar, vinegar, mustard, salt and pepper.
- Pour over broccoli mix and toss to coat
- Just before serving, sprinkle with Parmesan cheese and almonds.

This sounds wonderful I am going to try this today only I will blanch the broccoli just for 30 seconds and shock it in an ice bath. It will be a nice bright green and a sweeter flavor.
