Ingredients

4 med size russet potatoes,shredded or frozen

1 can of cream of chicken soup

1 cup of sour cream

1 small onion ,chopped

2 large bag of shredded chedder cheese

salt and pepper to taste

1/4 stick of melted butter

Directions

Grease a baking dish,In a large bowl,grate potatoes (for a more homemade taste.)

add chicken soup,onion,cheese,sour cream,salt and pepper. pour into your baking dish.

pour melted butter on top

bake for 45 minutes at 350.let stand for 10 minutes before serving.

When I make this dish,I add about 2 cups of crushed cornflakes to the butter and spread on top of potatoes to give it a crunchy texture also. When we have a potluck at work I am always asked to bring these and they say "don't forget the crunchy topping"
