Holiday Cranberry Nut Cake Recipe
This is easy, easy, easy, but good, good, good. This has been in my family for as far as I can remember. Not sure where it generated but know it is on the table every year at Christmas and Easter. Enjoy

Ingredients
  • 2-1/4 cups granulated sugar
  • 1 teaspoon cinnamon
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups self rising flour
  • 1 teaspoon vanilla
  • 1 cup chopped nuts
  • 3 cups ground raw cranberries
  • Glaze:
  • 1/2 teaspoon soda
  • 1/4 teaspoon salt
  • 1-1/2 cups granulated sugar
  • 1 teaspoon corn syrup
  • 1/2 cup milk

Directions
  1. Combine eggs, sugar, cinnamon and oil then add 1 cup flour and the vanilla.
  2. Use one cup of flour to flour the cranberries and nuts then stir in last.
  3. Bake at 350 in a large loaf pan for 1 hour.
  4. Combine glaze ingredients then bring to a boil.
  5. Pour on cake as soon as cake is removed from the oven.
  6. Allow to stand until completely cooled.
