This dish is so good. I love the unique taste of cranberrys with chicken and all the yummy spices.

Ingredients
  • 8 oz. jellied cranberry sauce
  • 1/2 cup dry sherry
  • 1 1/2 cups chicken broth
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 1/4 ground cloves
  • 1/4 tsp. ground pepper
  • 2 star anise (whole)
  • 1/2 tsp dry mustard
  • 2 tbsp dark brown sugar
  • 2 lb. chicken breasts (boneless)
  • some seasoned flour( flour with salt and pepper), enough to cover a diner plate
  • 1/4 cup butter

Directions
  1. Preheat oven to 350
  2. Combine the cranberry sauce, sherry, chicken broth, spices, and sugar.
  3. Simmer for 10 minutes, then discard the star anise.
  4. Heat the butter in a skillet until it is foamy.
  5. Dredge the chicken breasts in the seasoned flour, and saut'e in the butter for 1 minute on each side.
  6. Transfer the chicken to an oven proof dish.
  7. Pour the cranberry mixture into the skilled , and reduce by half over high heat.
  8. Pour the sauce over the chicken , and bake at 350 degress for 20 to 30 minutes.
