Fragrant  Lamb And Fruit Recipe
An unusal lamb dish, in which all the flavors belnd well together when slow cooked atop the stove

Ingredients
  • 4 pounds boned and rolled shoulder of lamb
  • 1/2 cup butter
  • 1/2 cup water
  • 1/2 teaspoon saffron
  • 3 onions, chopped
  • 1 quart buttermilk
  • 2 garlic cloves, finely chopped
  • 2 teaspoons ground ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon salt
  • 2 whole cloves
  • 1 teaspoon grated lemon peel
  • 3 cardamom seeds
  • 2 cups raw rice
  • 1/2 cup shelled pistachio nuts
  • 2 oranges, sectioned
  • 1 grapefuit, sectioned
  • 1/2 cup seedless grapes
  • .

Directions
  1. Brown lamb on all sides in butter in deep kettle.
  2. Add water,
  3. Cover ,cook for 1 1/2 hours, turning occasionally.
  4. Add saffron,onions, buttermilk, garlic, ginger, pepper,salt, cloves,lemon peel, cardamom seeds, and rice.
  5. Mix nuts and fruit. and place on top of the mixture.
  6. Cover.
  7. Cook for 30-40 minutes longer.
