Cheesy Spinach And Pasta Bake Recipe
CHEESY SPINACH AND PASTA BAKE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Daly Estate in Harrell, Texas in 1988.

Ingredients
  • 7 ounce package uncooked dried elbow macaroni
  • 1/4 cup dried bread crumbs
  • 1 tablespoon butter
  • 1 medium onion chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon coarsely ground pepper
  • 1 teaspoon finely chopped fresh garlic
  • 10 ounce package frozen chopped spinach thawed and drained
  • 4 ounces shredded Mozzarella cheese
  • 1/2 cup freshly grated parmesan cheese

Directions
  1. Heat oven to 350 then cook macaroni according to package directions and drain well.
  2. Sprinkle bread crumbs into buttered casserole dish then set aside.
  3. Melt butter in skillet until sizzling then stir in onion, Italian seasoning, pepper and garlic.
  4. Cook over medium high heat stirring constantly, until onion is softened about 3 minutes.
  5. Stir in spinach then continue cooking stirring constantly until spinach is heated through.
  6. Stir in cooked macaroni and all remaining ingredients.
  7. Spoon into prepared casserole pressing gently then bake 25 minutes.
