Virgin Bourbon Chicken Recipe
This is a version of the bourbon chicken you get at the mall (maybe a little better though). The best part - you don't use bourbon! This dish is completely alcohol-free, and it is one of my family's favorite dishes.

Ingredients
  • 4 lbs boneless chicken breasts and/or thighs, cut into bite-size pieces
  • 1/2 cup olive oil
  • 3 tsp miced garlic
  • 3/4 teaspoon ginger
  • 1/4 tsp ground red pepper
  • 3/4 cup apple juice
  • 1 cup light brown sugar
  • 3/8 cup ketchup
  • 3 tablespoon apple cider vinegar
  • 1 & 1/2 cup water
  • 1/2 cup soy sauce
  • 1 tsp corn starch (dissolved is a small amount of water)

Directions
  1. Cook chicken covered over medium heat until done through.
  2. Drain chicken, and add oil.
  3. Continue to cook, stirring occasionally until chicken is lightly browned.
  4. Combine remaining ingredients in a large bowl, stirring until dissolved.
  5. Add mixture to chicken, and cook over medium-high heat until it comes to a hard boil.
  6. Reduce heat and simmer for about 25 minutes or until slightly thick.
  7. Serve over rice.
