Virgin Bourbon Chicken

- 4 lbs boneless chicken breasts and/or thighs, cut into bite-size pieces shopping list
- 1/2 cup olive oil shopping list
- 3 tsp miced garlic shopping list
- 3/4 teaspoon ginger shopping list
- 1/4 tsp ground red pepper shopping list
- 3/4 cup apple juice shopping list
- 1 cup light brown sugar shopping list
- 3/8 cup ketchup shopping list
- 3 tablespoon apple cider vinegar shopping list
- 1 & 1/2 cup water shopping list
- 1/2 cup soy sauce shopping list
- 1 tsp corn starch (dissolved is a small amount of water) shopping list
How to make it
- Cook chicken covered over medium heat until done through.
- Drain chicken, and add oil.
- Continue to cook, stirring occasionally until chicken is lightly browned.
- Combine remaining ingredients in a large bowl, stirring until dissolved.
- Add mixture to chicken, and cook over medium-high heat until it comes to a hard boil.
- Reduce heat and simmer for about 25 minutes or until slightly thick.
- Serve over rice.
