How to make it

  • Put olive oil in a deep skillet and turn heat to medium high.
  • When oil is heated add ginger and cook stirring for 1 minute.
  • Add spices and cook stirring for 30 seconds then add tomatoes, salt and pepper.
  • Stir and bring to a boil then reduce heat to medium and cook stirring occasionally for 15 minutes.
  • Add shrimp then cook stirring occasionally until shrimp are cooked through about 10 minutes.
  • Adjust seasoning then serve over white rice garnished with cilantro and lime wedges.
