Shrimp In Moroccan Style Tomato Sauce Recipe
SHRIMP IN MOROCCAN STYLE TOMATO SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Alford Estate in Tyler, Texas in 1987.

Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon minced ginger
  • 1 tablespoon ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon minced lime zest
  • 28 ounce can chopped tomatoes drained
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1-1/2 pounds peeled shrimp
  • Minced fresh cilantro for garnish
  • Lime wedges

Directions
  1. Put olive oil in a deep skillet and turn heat to medium high.
  2. When oil is heated add ginger and cook stirring for 1 minute.
  3. Add spices and cook stirring for 30 seconds then add tomatoes, salt and pepper.
  4. Stir and bring to a boil then reduce heat to medium and cook stirring occasionally for 15 minutes.
  5. Add shrimp then cook stirring occasionally until shrimp are cooked through about 10 minutes.
  6. Adjust seasoning then serve over white rice garnished with cilantro and lime wedges.
