How to make it

  • Using an electric mixer, beat butter and Parmesan until creamy.
  • In a large pot of boiling salted water, cook fettuccine according to package instructions until al dente, about 12 minutes.
  • Reserve about 1/2 cup of cooking water; drain pasta.
  • Return fettuccine to warm pot.
  • Toss pasta with 1/2 teaspoon salt, cheese mixture, and 1/4 cup of the pasta water.
  • Add more pasta water, as needed.
  • Serve with additional cheese.

    every time i try to make an alfredo or any parm. cheese/pasta dish, the cheese all glops together, i never get a smooth sauce..what do i do wrong?

    sounds great. I'm going to saute' 1 lb of shrimp in butter and garlic and add to this...Can't wait. I love fetuccine alfredo but get tired of making the sauce so I'm going to cheat and do this...thanks for the recipe.

    I have been living in Italy 8 years now and have never come across any Fetuccini Alfredo. I asked people at work and they laughed, I did a search online and came accross an Italian site that talks about how in America this dish has been dubbed a typical Italian dish but the Italians on there had never eaten it! :) in any case, sounds like a heart attack on a plate (yummy!) we do have similar dishes, really cheesy and creamy ones but they are not called Alfredo.
