How to make it

  • Heat the olive oil on medium to high heat in a pan.
  • Liberally salt and pepper the fish
  • Place fish in pan skin side down and let cook for 4 minutes
  • Meanwhile heat a tbs. of butter
  • Add chives to taste
  • Add lemon zest and a bug squeeze of lemon juice.
  • Flip the fish and cook another 4 minutes or so until it is golden brown and/or flakes with a fork.
  • Plate the fish and drizzle the butter on top.

    Is the Arctic Char something like Salmon? Chives, butter and lemon are fantastic to use on fish.

    Sounds pretty good there, sammi; however, I would even know where to look for a pound of arctic char! The recipe IS lovely, though so I give you my five and my thanks!
