How to make it

  • Mix the carrots, cos lettuce, capsicum, parsley, coriander and Spanish onion in a bowl. Whisk together the lemon and lime juice, tamari, ginger, garlic and chilli.
  • Pour over the vegetable mixture.
  • Place all the citrus ingredients in a bowl including the salmon and let it marinate for 10 minutes.
  • Lightly pan-fry the salmon until slightly pink in the middle.
  • Serve the salmon on a bed of the vegetable mixture or a green a salad.
