Wheat-Free Cheese Crackers Recipe
this is a recipe that I found but have not tried... thought some of my other gluten free friends might like to try it... the recipe is from Notchland Inn US Route 302 Hart's Location, NH 03812

Ingredients
  • 1 cup Garbanzo Bean (or other non-wheat) Flour
  • 1/2 cup Oatmeal
  • 1 teaspoon Salt
  • 4 tablespoons Butter
  • 4 oz Cheddar Cheese, grated ***
  • 2 oz Asiago or Parmesan Cheese, grated
  • 1 Egg Yolk
  • 2 tablespoons Cold Water
  • 1/3 to 1/2 cup Chives, chopped
  • **** the sharper the cheese the more cheese flavor they will have

Directions
  1. Process the first four ingredients in a food processor until it looks like coarse cornmeal. (about 5 seconds)
  2. Add in the cheeses & pulse until just mixed. Add the egg yolk, water & chives, and pulse until the dough comes together.
  3. Form dough into logs, and refrigerate for an hour*. Then cut it into very thin slices and bake at 375 degrees F. for 15 to 20 minutes.
  4. *If you’re in a big hurry, you can roll out the freshly made dough very thin, stab it liberally with a fork, cut cracker shapes and bake as usual.

Thanks Peeta, I think I will make this for Britt today. She likes cheese, and it would somthing diffrent than the tostados.....:)
