Wheat-Free cheese Crackers

- 1 cup garbanzo bean (or other non-wheat) flour shopping list
- 1/2 cup oatmeal shopping list
- 1 teaspoon salt shopping list
- 4 tablespoons butter shopping list
- 4 oz cheddar cheese, grated *** shopping list
- 2 oz Asiago or parmesan cheese, grated shopping list
- 1 egg yolk shopping list
- 2 tablespoons Cold water shopping list
- 1/3 to 1/2 cup chives, chopped shopping list
- **** the sharper the cheese the more cheese flavor they will have shopping list
How to make it
- Process the first four ingredients in a food processor until it looks like coarse cornmeal. (about 5 seconds)
- Add in the cheeses & pulse until just mixed. Add the egg yolk, water & chives, and pulse until the dough comes together.
- Form dough into logs, and refrigerate for an hour*. Then cut it into very thin slices and bake at 375 degrees F. for 15 to 20 minutes.
- *If you’re in a big hurry, you can roll out the freshly made dough very thin, stab it liberally with a fork, cut cracker shapes and bake as usual.
