How to make it

  • Process the first four ingredients in a food processor until it looks like coarse cornmeal. (about 5 seconds)
  • Add in the cheeses & pulse until just mixed. Add the egg yolk, water & chives, and pulse until the dough comes together.
  • Form dough into logs, and refrigerate for an hour*. Then cut it into very thin slices and bake at 375 degrees F. for 15 to 20 minutes.
  • *If you’re in a big hurry, you can roll out the freshly made dough very thin, stab it liberally with a fork, cut cracker shapes and bake as usual.

    that sounds good, i love cheese crackers!
    by the way, i understood anyway but there's four stars next to "the sharper the cheese the more cheese flavor they will have"
    and only three next to "4 oz cheddar cheese, grated"
    but a very simple well written recipe (:
