How to make it

  • Heat oil in a large nonreactive pan over medium heat.
  • Add cumin seeds, mustard seeds, turmeric, cardamom, curry powder, cloves and cayenne.
  • Sauté until fragrant about 30 seconds then add carrots and sauté 5 minutes.
  • Stir in banana and raisins then add water, salt and pepper and bring to a boil.
  • Cover and reduce heat to low then simmer 20 minutes.
  • Uncover and increase the heat to medium and cook shaking frequently for 10 minutes.
