I was curious about this recipe and made it a few months back when I prepared a full Indian meal. This was very good and loved by all. Enjoy

Ingredients
  • 1/4 cup vegetable oil
  • 1 tablespoon cumin seeds
  • 1-1/2 teaspoons yellow mustard seeds
  • 1-1/2 teaspoons ground turmeric
  • 1 teaspoon ground cardamom
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon cayenne
  • 1 pound carrots peeled and sliced
  • 1 medium banana peeled and sliced
  • 1/4 cup golden raisins
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Chopped parsley or coriander for garnish

Directions
  1. Heat oil in a large nonreactive pan over medium heat.
  2. Add cumin seeds, mustard seeds, turmeric, cardamom, curry powder, cloves and cayenne.
  3. Sauté until fragrant about 30 seconds then add carrots and sauté 5 minutes.
  4. Stir in banana and raisins then add water, salt and pepper and bring to a boil.
  5. Cover and reduce heat to low then simmer 20 minutes.
  6. Uncover and increase the heat to medium and cook shaking frequently for 10 minutes.
