Black Beans And Rice Recipe
This recipe is based on a favorite dish she had often when living in Tampa 25 years ago. It is very tasty and she swears it is as good as she remembers.

Ingredients
  • 8 oz chorizo (Mexican style fresh, not cured, casing removed)
  • 1 onion
  • 1 green pepper
  • 1 jalapeno (optional)
  • 4 cloves garlic
  • 1 teas ground cumin
  • 1 teas oregano
  • 1 c cilantro leaves, loose
  • 1/2 teas salt
  • 4 c chicken broth or water
  • 2 cans black beans, drained and rinsed (or 3 c cooked black beans)
  • 3 c cooked white (white or yellow)

Directions
  1. In a pot, cook the chorizo, crumbling it.
  2. In a blender or food processor add the jalapeno, onion, green pepper, garlic, cilantro, cumin, oregano, salt, and 2 cups of the chicken broth.
  3. Puree until smooth.
  4. Add to the chorizo.
  5. Let simmer for 10 minutes.
  6. Add the black beans and the remaining stock.
  7. Simmer for an hour, if the mixture reduces too much add some water.
  8. Check for seasoning, add salt and pepper if needed.
  9. Place 2/3 cup of rice in a shallow bowl and ladle the bean mixture over the top.
