Bean Soup With Kale Recipe

Ingredients
  • 1 tbsp. olive oil or canola oil
  • 8 minced garlic cloves,
  • 1 medium sized yellow onion(minced)
  • 4 c. chopped raw kale
  • 4 c. low-fat, low-sodium chicken or vegetable broth
  • 2 (15 ounce) cans of white beans, such as cannellini(this is my favorite)
  • 4 plum tomatoes, coursely chopped
  • 2 tsp. dried Italian herb seasoning
  • Salt and pepper to taste
  • 1 c. chopped parsley

Directions
  1. In a stew pot, add EVOO.
  2. Add the garlic and onions, sauteing until the onions are yellow.
  3. Stir in the kale, sauteing until the kale in wilted.
  4. Add 3 c. of broth, 2 c. of beans, all of the tomatoes, the herbs, and the salt and pepper(pepper flakes add great flavor).
  5. This will simmer around 5 min.
  6. Add the remaining beans, stirring frequently to thicken the soup.
  7. Simmer the soup around 15 min.
  8. Add chopped parsley to bowls of soup before serving. Enjoy!

This was sooooo good!!!! I loved it! However, I did not have everything - so I used a can of diced tomatoes that were flavored for pasta instead of the tomatoes and used 1/4 cup dried parsley, mixed it in with the soup since I didn't have fresh.


Oh yeah and for anyone clueless like me, EVOO means Extra Virgin Olive Oil

This soup is insanely delicious!!! I put in about 3 huge pinches of cumin and some oregano, instead of the Italian herb mix. My boyfriend absolutely loves this soup and I do too. This recipe will stick with me forever. Thank you winslow, your soups have not let me down!


Wonderful recipe! I made this with a few alterations...just because I was taking from the cabinet and not wanting to go to the store. I used two cans of northern beans, one can of diced tomatoes, and 1/2 of a bell pepper because I did not have parsley. I absolutely loved this!
