Bean Soup with Kale

For a nutricious diet, add this recipe! Each healthy serving has 7mg of lutein!
Ingredients
- 1 tbsp. olive oil or canola oil shopping list
- 8 minced garlic cloves, shopping list
- 1 medium sized yellow onion(minced) shopping list
- 4 c. chopped raw kale shopping list
- 4 c. low-fat, low-sodium chicken or vegetable broth shopping list
- 2 (15 ounce) cans of white beans, such as cannellini(this is my favorite) shopping list
- 4 plum tomatoes, coursely chopped shopping list
- 2 tsp. dried Italian herb seasoning shopping list
- salt and pepper to taste shopping list
- 1 c. chopped parsley shopping list
How to make it
- In a stew pot, add EVOO.
- Add the garlic and onions, sauteing until the onions are yellow.
- Stir in the kale, sauteing until the kale in wilted.
- Add 3 c. of broth, 2 c. of beans, all of the tomatoes, the herbs, and the salt and pepper(pepper flakes add great flavor).
- This will simmer around 5 min.
- Add the remaining beans, stirring frequently to thicken the soup.
- Simmer the soup around 15 min.
- Add chopped parsley to bowls of soup before serving. Enjoy!

this was sooooo good!!!! I loved it! However, I did not have everything - so I used a can of diced tomatoes that were flavored for pasta instead of the tomatoes and used 1/4 cup dried parsley, mixed it in with the soup since I didn't have fresh.
