TIMES ARE TOUGH ONE EGG CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Irving, Texas in 1988.

Ingredients
  • 2 cups cake flour
  • 1 cup granulated sugar
  • 3/4 cup milk
  • 4 tablespoons shortening
  • 1 egg
  • 3 teaspoons baking powder
  • 1 teaspoon vanilla

Directions
  1. Combine all ingredients and beat well for 2 minutes.
  2. Pour into loaf pan and bake at 350 for 40 minutes.
