Ingredients

3/4 cup cottage cheese drained

1 egg

1 teaspoon dried basil crushed

1 medium red bell pepper

1 cup shredded mozzarella cheese

2 tablespoons grated parmesan cheese

1 clove garlic minced

1/8 teaspoon freshly ground black pepper

1 cup sliced fresh mushrooms

2 pizza crusts unbaked

Directions

Place pizza dough on pizza pan sprayed with nonstick cooking spray and sprinkle with cornmeal.

Build up edges slightly then bake at 425 for 10 minutes.

In a blender combine cottage cheese, egg, parmesan cheese, basil, garlic and pepper.

Cover then blend until smooth and spread over hot crust.

Cut bell pepper into rings then lace on top of pizza with mushrooms.

Sprinkle with mozzarella then bake at 425 for 20 minutes.
