Ingredients
  • 5 1/3 cups sweetened shredded coconut
  • 1 can (14 ounces) sweetened condensed milk
  • 2 t vanilla

Directions
  1. Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
  2. Mix all ingredients well. Drop by teaspoonfuls onto prepared baking sheet.
  3. Bake 8 to 10 minutes or until light brown. Remove immediately from baking sheet.
  4. Per cookie: 52 calories; 1 g protein; 6 g carbs; 0 fiber; 3 g fat (2 g sat fat); 2 mg cholesterol; 26 mg sodium
